Welcome 2 Kimchi Land

Yup. You read it. Welcome to Kimchi Land. Everyone knows kimchi right? I mean, you can't be Korean and not know about kimchi!! When I went to summer camp, not a lot of people had heard about kimchi. Some 'big brain full of cells' kids knew what kimchi was. But the majority, not so much. That's why the only Korean in the camp introduced the kids to Kimchi, how you make it, why it's a superfood, and why it's delicious, and why you should eat it with ramen, and why.......

First, I told the kimchi-ignorant kids the basic concept of kimchi.

It is a pickled cabbage, made in winter. It's made in winter because the kimchi cabbage doesn't produce in winter. If people made kimchi with summer cabbage, it would taste different from the normal kind of kimchi. Anyway, it's a pickled cabbage with over a dozen types of ingredients and a food Koreans take pride in. Some people could make kimchi with their eyes closed.

First, cut the cabbage in half, and put it in salt water for about 10 hours. That, is the pickling process. Now, for the stock, put radish, green onions, pollack heads, mushrooms, dried anchovy, dried herring, spicy pepper seeds, and water. Boil it, and you get a perfect kimchi stock. Next, the sauce. There are 8 ingredients for the sauce. They are; radish, anchovy fish sauce, chili powder, salted shrimp, flour paste, sugar, garlic and ginger. Put them in a really big bowl. It doesn't matter what kind of 'big' it is. Just find a really, really big bowl, that's enough for a enormous cabbage. So mix them together. Now, you have the marinade. Get the pickled cabbage out, and layer by layer, paste the marinade on each layer. That's a really important part. Otherwise, the sauce won't spread through the cabbage. After that, put the marinated cabbage in a kimchi box. Then pour in the stock in the corners of the box.

Wait a while and you have a delicious kimchi for you to eat with ramen. Kimchi also has loads of lactic acid bacteria that helps digestive functions. Anyway, bye guys...zzz(need to sleep!!)
